Nutty Coconut Cookie Dough Bites

Ingredients:
● 1 Tbsp. extra virgin coconut oil
● 4 dates, chopped, soaked in 2 Tbsp. warm water
● 2 Tbsp. chia seeds
● ¼ cup almond flour
● ⅛ tsp. ground cinnamon
● ¼ cup unsweetened shredded coconut
● ¼ cup unsweetened cashew butter

● ½ Tbsp. pure vanilla extract
Method:
1. Combine soaked dates, coconut oil, cashew butter and vanilla in a food processor and blend until smooth.
2. Take a small bowl and mix chia seeds, almond flour and cinnamon in it.
3. Fold up the cashew mixture into the almond flour mixture to make a thick batter. Refrigerate this batter for around 10 minutes.
4. Now take the batter out of the fridge and tap into round balls.
5. Roll each ball in the shredded coconut mixture. Lay the balls on a plate covered with wax paper and refrigerate for at approximately 10 minutes.
6. Keep the extra bites frozen.

Cherry Almond Crumble

Ingredients:
● 1½ cups frozen pitted cherries
● ¼ cup old-fashioned rolled oats
● ¼ cup unsweetened crunchy almond butter
● ½ tsp. fresh grated ginger
● 1 Tbsp. fresh squeezed lemon juice
● 1 tsp. sliced almonds
● ½ teaspoon ground cinnamon
● 1 Tbsp. water
Method:
1. Take a small bowl and add almond butter, oats and cinnamon to form a crumble.
2. Place the mixture aside.
3. Now take a small pan over low heat, stir fry the cherries with water, lemon juice and ginger till it is warmed through and becomes bouncy.
4. Transfer the cherries to another bowl, crown with crumble, and garnish them using sliced almonds.
